I have my first wedding cake coming up and the bride wants a very simple two tier square cake. she only wants black ribbon around the base of the tiers and no other decorations. My question is what is the best way to get that perfect clean look on a square cake? and she also does'nt want a sweet icing, the icing that is listed with sarahs red velvet cake recipe on this site would be perfect for the taste but it does'nt crust. I would have been more comfortable of she wanted scroll work or even just dots piped here and there icon_cry.gif sorry the is so long, thanks for your input.

perfect look is fondant or you can use an altered RI icing to give the shinyness without decor

i thought fondant too, but I don't think the bride will like that, being that fondant is pretty sweet.

If you're doing the cake in BC, the upside down technique by Jeff results in cakes with very sharp edges and can be used with non-crusting BC. Here's the link to it: http://www.cakecentral.com/article6-Upside-Down-Icing-Technique-for-Perfectly-Smooth-Icing.html
