Why Is It Always During The Hottest Weather......???

That people have to order carrot cake with cream cheese icing from me?? I very rarely have that on requested but the last three times, the week that they are to be done, it is the hottest, humid weather on record?? I have one ordered for later this week and the weather is SO hot here- I hope it breaks soon.

Thanks, just had to vent...

well, carrot cake isuallt taste best in hot weather, just keep it refrigerated you will be alright

You know I just did a Carrot cake and I just used a cream cheese filling with BC frosting. It actually still tasted like Cream cheese and didn't melt. I'm sure that's not what your client wants but maybe you can expalin to them that this would be better for the heat. That way they get what they want and you don't have to worry about the melting.

I found a cream cheese recipe that is warm weather stable, it is from Earlene's site,

I have found is does have a cream cheese taste but is a bit sweet so perhaps cutting the sugar amount will help that. It does pipe well though!
I just did a carrot cake last weekend with cream cheese frosting and the customer insisted I use her recipe for the frosting, it was basically just whipped cream cheese with a bit of butter and tiny amount of p. sugar. It tasted great but it had to stay in the fridge the entire reception except for the actual cutting, who picks a hall in July with NO AIR CONDITIONING?????? I wanted to use this recipe but she was the one paying...never again!!!!
Sorry to ramble but it was my biggest nightmare cake to date, cream cheese cracks in the fridge!(her recipe does in any case..)
