My son is getting married in May 2008 on Maui. I had offered to do the cake before the location was changed from California to Maui and now don't know if I still should. We are traveling from Wisconsin 4 days before the wedding, so pre-baking isn't really an option. Perhaps I could buy the baked layers, and just decorate there, bringing what I need along. I am concerned about the change in climate from what I am familar with and how my icing would hold up. Also, should I take the premade icing with me - can you even have this on an airplane these days? Decorations are not elaborate - beach theme - shells, coral, etc., so I think I could handle that. Any suggestions would be appreciated.
Also, they are looking for ideas for wedding favors. Since everyone will be on vacation to attend, my thought was not to give them more stuff to take back. Perhaps cookies?
Hmmmm...that's a tricky one. One possibility of course is to stay at a place in Maui that has a kitchen of some sort in it (rental house or something). That would obviously be the best bet.
Other than that if you wanted to BRING cake with you could look into using a cooler you'd check with dry ice and maybe bring the ingredients for the icing along and have all the accessories pre made. If you are bringing cake I would freeze prior to leaving and have the dry ice keep it frozen. Though 4 days is a long time...how long does dry ice last?
You may be planning on staying at a hotel if that's where all of the wedding festivities are taking place, but I definitely second the motion for a condo with a kitchen - then you can make or assemble whatever you want in the comfort of your own "home" (you probably don't need me to remind you to bring all of your tools including pans). Condos on Maui can oftentimes be secured for less than a hotel (since there are fewer amenities, i.e. no room service, etc.) and make for a great trip. This would be my most humble opinion and personal preference btw. Perhaps you could do a condo the first few nights and then switch to the hotel for the wedding day...
Either way it sounds like you need to make sure your room has a fridge, if you're going to make (or decorate) the cake yourself. This may be a "Well DUH" so pardon me if I'm stating the obvious

If you want to buy the "parts" (i.e premade cakes, perhaps they sell icing too?) on Maui give a call to Costco or WalMart, each are right by the airport. Or of course I am sure you could easily get an undecorated cake from any local bakery, order some rounds and then ice, stack and decorate yourself. If you're in a condo you could surely make your own icing (but of course most condos don't stock a KA!)
As for the change in climate versus what you're used to, I'm not sure that would be a huge adjustment; doesn't Wisconsin get quite hot and humid in the summertime? The weather in Maui would perhaps be a little less hot (but comparably humid). I'd say that any cake that would hold up in Wisconsin should do fine in Maui.
We had friends who got married on Oahu and their favor was pretty neat: they bought a bulk of nice Hawaiian 4x6 frames for the favors and also mailed each guest a photo of themeselves (i.e. the GUESTS, not the couple) taken by their photog at the wedding. A great memento from the wedding as well as a fabulous souvenir of the trip.
