I need to do a Grooms Cake, and he wants it to be a giant Banana Moon pie. Not cake, he wants the marshmallow center and top and bottom crusts. I thought I could use marshmallow cream for the center, and flavor fondant for the covering, but am not sure what would work for the top and bottom crusts. Any suggestions?

I was thinking about these recently after watching foodnetwork do a show, they were talking about "whoopie pies". not the same but looked to be similar. Unfortunately i can't find any moon pies since i left brooklyn, ny -sold at the corner stores.

Yes, there are various recipes. The one I'm used to is a soft flaky breadlike "crust" but I've found out others expect a crispy one?

Also the "coating" of the moonpie is a poured one. And would probably look better poured. That way you can just barely see the filling in the middle. Also (sorry) make sure you mix some powdered sugar in with the marshmallow cream so it isn't "creamy". (or something else. hope someone else knows what to mix in with it)
