Make A Cake To Include Bailey Irish Cream Liquor?

I have a bride who wants a chocolate cake which includes Baileys. I don't know if they have this in the states, it's a cream liquor which is gorgeous but doesn't mix with most mixers as it's cream based and curdles. I think it's a blend of cream and whisky.

Would I be best off adding it to the buttercream for the filling or is there a way to add liquor to the cake mix without making it taste too much?

I would suggest experimenting with a small test cake, and just repalce the liquid called for in the recipe with the liqueur. Usually, that works out pretty well, but if it's too much, reduce it and/or cut it with milk.

It should work just fine mixed with the buttercream for filling. Sounds good, I may try this for my husband's b'day cake in a couple fo weeks.

I'm doing your suggestion now- I sloshed a bit in with the mix instead of milk and I'm going to add some to the buttercream - I'll let you know how I get on!

normally if you are adding liquor to cakes you cant use all the liquid as the liquoe. it will bake out and the cake will be dry...try 1/2 and 1/2 first and see how that works.

I have added baileys to my cakes before and have not had a problem. I have also added it to the buttercream but adding it to the cake is fine. The cake is not dry. In fact it is very soft.

mmm sounds like yummy cake! I would put the liquor in the buttercream though - will give it a really good taste I think! And it will help flavor the cake w/out the WHOLE cake being bailey's tasting..... let us know your results!

I am telling you baileys in the cake taste great, and that is what the person wants. I even use kalula it is very tasty.

If you decide not to do it in the cake you could make the baileys chocolate mousse (www.ladycakes.com) It is supper yummy.

My wedding cake was a white chocolate cake filled with buttercream flavored with Bailey's. Sooo good.mmmmm.

I made the chocolate sponge with Baileys in it and it was drier than normal so it's interesting that you've said it can make it dry. I added some to the buttercream as well - which was gorgeous. I will make a normal chocolate cake (no Baileys) and just put it in the buttercream.

Emma,

If your making a chocoalte sponge you can also just add the baileys to the simple syrup for the cake. I put baileys ( and Dooleys the toffee liqueur) in loads of cakes.

After the cake cools I get a fork and prick holes over the top of
the cake. Then pour the liquor on the cake. That way you get all
the flavor. I do this with most of my cakes... Just my 2 cents.

I make a Baileys Chocolate Mud cake all the time - here is the recipe for all to see

Approx enough for 8 cake
Preheat oven to 190 degrees Celsius

250g butter
150g good quality dark chocolate
2 cups castor sugar
1 cup water
1/3 cup Baileys (tia maria or kaluha any liqueur works well)
1 tablesppon coffee

Place all ingredients into a saucepan and stir constantly until all ingredients are melted and well mixed. Place in a bowl and allow to cool slightly for 15 minutes.

To the cooled mixture add

2 eggs lightly beaten (mix before adding dry ingredients)
1 ½ cups flour
¼ cup Self Raising Flour
¼ cup cocoa
* flour and cocoa are to be sifted)

Stir together and place in oven for 1 and ½ hours.


It has never failed me and so many customers and family members have commented on how delicious the cake is. Let me know how you go. (sorry it is in grams, but I am Aussie)
