Need Help...first Possible Wedding Cake!

Okay guys, I have the possibility of booking a wedding cake for September. How excited am I?! icon_biggrin.gif This would be my first one. I want to do a tasting for the bride. There are three different types of cake she's interested in. I would like to just make the three different types as 3 6" rounds. Question---is there any failproof way to scale down a cake recipe? I'm a scratch baker and I'm fine with increasing recipes for large cakes like sheetcakes and stuff, but I've never had to go the other way. I just don't want to have a bunch of excess cake left hanging around. Thanks for any help that you can offer!

Congrats on your first wedding cake possibility!

I would suggest re-posting this ? with the subject "Scaling down scratch recipes?" or something like that. You'll get more and better answers from scratch bakers!

Can you make a single recipe of each cake, and bake off a bunch of small (sample) cakes, and freeze them for future tastings? That's what I do!

Thanks for the ideas ladies. I could make them and freeze them I guess but I doubt that anybody else would want the wacky flavors that she's asking for so I don't know.

What I normally do is measure the amount of the baking pan by using water, put water (in your case, cups, in my case litres) in the baking pan at the normal cake height you get with the recipe, in the baking pan that is mentioned in the recipe.
Than measure the 6" pan with water and recalculate it. Works always fine by me.

I have also a schedule for you by whimsical bakehouse (alle cakes with butter in it, for a 6" cake they recommend 3 cups of batter. So in case your recipe mentions the cups of batter it makes, this could also help.

Congratulations! I might suggest that you go ahead and make the extra cake and make cake balls with the leftovers. Suggest that these might be given as favors and place them in small decorative boxes to give the bride and groom an idea for favors for each guest. This is a good way to increase your order and will surely impress them because you are going that extra step to help them. Besides, they will enjoy the balls and will be certain to remember you.

That's a good idea! I know I saw an article on making the cake balls, I'll have to check it out.
