Refrigerating Cake Layers

Greetings,

I have three cakes coming up this weekend, and I was wondering if and how early in advance cake layers can be refrigerated instead of freezing without drying out. I appreciate any advice that you can offer. icon_smile.gif

I am not sure about this - the fridge tends to really dry out cake. I would either bake on Thursday and ice and decorate on Friday or bake one tomorrow - freeze it and pull it out - just to get ahead!

I would freeze it, it seals in the moisture. Putting it in the fridge will dry them out, or at least it does for me.

I agree - if you can't bake them Thur or later then I would bake them now and wrap them in saran warp and freeze. Then take them out Thur evening to thaw.

I am new to cake baking and decorating, so my experience is limited.

I have not frozen any layers, but have refrigerated some, and they came out surprisingly moist, to the point where I was complimented on how moist the cake was.

I first wrapped the layers in freezer paper
Then I stuck them in a huge ziplock bag
Then I sucked out all of the air with a straw

Would the same idea work for freezing?
How long is acceptable for freezing vs fridg for good results?
