Covering A Large Cake

I've seen a few posts, and did a few searches myself about covering a large cake. Last week I had a 60x60cm cake (approx 23.5 inches) to cover. I've never done anything on this scale before, and I just thought I'd share how I managed to get it done. Obviously there is no right or wrong way, but there were a couple of techniques I found helpful.

The picture is the star in my pictures, to help with any explanation, the wrestling ring in my pictures also used the same technique, this one demonstrates it better because I used a different colour for the top and the sides.

I had thought I would need to cover the star in several pieces on top because I did not have a large enough piece of rollout plastic however I discovered through some experimentation with the template that by going diagonally I only needed two pieces on top (ie three points were covered at a time. I cut outside the template so some fondant did hang down, I removed that flush to the side of a cake with an exacto knife. Once the two pieces were in place and the middle exploding pieces cut I was only left with two small seams one either side of the "explosion" so I was very happy with that.

I then rolled thick pieces that I ran around the sides of the cake again cutting a little to long and then using an exacto knife to cut flush to the top of the cake, you can see the seam in the wrestling cake, I obviously wanted to keep that effect in that cake, but in the star cake I didn't want the seam to be obvious, so I extruded pieces of fondant rope to cover the seam and matched it with a smaller rope on the bottom to tidy up the seam that met the board.

What obviously helped as well was keeping the fondant quite thick.

I hope the explanation makes sense. Sorry i don't have pictures. I was quite worried about how to get this particular cake done, and using this technique instead of trying to cover the whole thing at once, helped this to turn out better than I'd hoped. I just wanted to share my experience for those of you trying to cover big cakes, hehehe I won't be in a hurry to try one this big again after all it took two people to carry it! icon_biggrin.gif
