i have to make a 18X12IN. chocolate sheet cake w/7 min. frosting (20 PEOPLE) they want a layer of frosting in the middle how do i do i layer it ,or should i bake 2 layers ? that is just alot of cake mix (i make from scratch) how much should i charge ?? icon_confused.gificon_confused.gif

I would make two layers............ but a smaller cake for 20 people.

tort it just like any other cake

hint: use a large cookie sheet dusted w/ powdered sugar to slip in between to lift off the top layer after cutting.

then slather in the filling and replace the top part.

i do this all the time-- nice surprise to have filling in the middle of a sheet cake.

as for charge:

well a 12x18 at party size 2x2 servings yields 54 servings. ----

so at least $54 (which is a measly $1/serving)

$81 = $1.50/serving

$108 = $2/serving.

and have to ask ---

why do they want such big cake for only 20 people

a 9x13 would serve 24 2x2 party servings.

i made a cake last week and they told me to make the same one ! I guess maybe they like really BIG pieces!! left overs I dont know , the cookie sheet idea is good - thanx yall !!

I just made an 11 x 15 inch sheet cake, Hershey Chocolate cake, for my grandson's birthday. I torted it. It is now being frozen. I will thaw and decorate it on Friday. Mocha whipped cream filling. Yummy.

How much did you charge them for the last cake? They probably will be thinking that you will charge them the same price as last week.

I charge $50 for a 12x18 single layer, not torted.

Perhaps they want a big cake because they just really LIKE cake?
I have a couple of clients who have only 4 people in their families, but they ALWAYS order a 12x18 so they can eat cake for a whole week. Sometimes they order a cake for no occasion at all just so they can have my cake.
You never know about people...

...but if I ate cake like that, I'd be big as a house.

I would do single layer torted. If you do a double layer cake, be sure to charge them double because they are getting the double amount of cake.

well I made 1 1\\2 x the batter and decided to play it safe and make 2 layers since i am new at this! it might be too difficult for me to divide being a larger cake > i am used to 9x13 . anyway, i used the super duper rich chocolate cake here on CC it is very good!! last week the cake was for a friend so I only charged her $30- these people happen to be regulars in our diner, (lawyers -I should charge double) they are trying to help me get starrted on my cake buisness so I dont want to charge too much I was thinking maybe $50 but tell them that in the future I will charge more , what do yall think? the cake smells good !! icon_smile.gif
