On several occasions I have noticed the use of a dummy cake tier in wedding cakes. I'm wondering if there is a basis for pricing them.

I was told by a couple of people that they charge the same for a dummy cake as they do for a real one but then what is the point of having a dummy cake? I agree that it's easier but you still have to completely decorate it, etc.. and if they are covered in fondant, then the cost is still high.

This is a sort of sticky question.

If you are asked to make a very specific dummy cake and you have no intention of taking it back, I'd think that you should charge exactly what a regular cake would cost.

If you're going to get the dummy back and will use it for display or re-claim the dummies to make another cake, I'd think that would amount to a rental and the charge should be commenserate with renting it. If others will/may use it in the future, I don't think it would be fair for one customer to pay for the whole thing. Would your business support "renting" it out again? If so, about how many times?

If you have an already prepared dummy that someone wants to use at their wedding, I'd definitely see that as a rental and ask for enough of a deposit to cover replacing it and then perhaps a small non-refundable rental fee.
