Leve Cupcakes?

I am making some sample cupcakes to use for promotion. I will be decorating them with various flowers and making them fancy to show off what I can do. So, do I level them off? I fear I have overfilled them a bit and some are popping out of their cups quite a bit icon_eek.gif ! Thanks for your time!

i always level mine so i have a nice flat surface to decorate on-- and so that they look more uniform. icon_smile.gif i also try to always freeze them first so that the tops are easier to lop off. good luck!

I would want to have a uniform look to these if you are using them to promote business or sell. Since they are already baked, I'd level them to be even...or make a new batch measuring the amount of cake batter to form a uniform look.

I read on here where someone had taken a cookie sheet and placed it on top of them as soon as they were removed from the oven. I tried this last week on my cupcakes for a cupcake cake and it worked wonderfully. I didn't have all the bumps and hills that I normally had with my cupcake cakes.

I have had a lot of success in the past with setting a heavy cutting board on the cupcakes (still in the muffin tin) as soon as they are out of the oven. Oh, lay a piece of wax paper over the cupcakes first so they don't stick to the cutting board. Works like a charm! thumbs_up.gif
