Ok so I have questions- a friend wants a small square wedding cake, 2 tiers, to serve 12 to 15 people - I've never done a square before in all my years. I do sheets as single layers and rounds as double, what do I do for square?

I do layers for sheets and squares. What can I say...I love fillings!

I've done 2 square cakes, you can see them in my photos. Both were 2 layers. Each layer was 2 cakes torted making each one 4 layers. I like adding the filling too, I find that the cake is more moist that way.

I EAT! a lot of squares, they are my favorite! icon_biggrin.gif So easy to serve.

Layers. At least two, three would be nice, four would be Heaven. Since she just wants a small one, you can go all out, so I would do four.

And squares give a lot of servings. Personally, I serve at least ten, sometimes 12, from a 6" square cake. I would think you could do an 8" cake to be safe, and just have a lot of fun with the decorations!

I love, Love, LOVE to do square cakes!
