Ok so here I go. I'll start with I BIT OFF MORE THAN I CAN CHEW!!! I took an order from some friends for a Large Double Anniversary. No problem just two small 3 tier Wedding cakes and 5 - 1/2 sheet cakes. No problem I've done 4 whats a few more. As long as everything goes smoothly right?
I sould have taken a hint when one of my 1/2 sheets didn't cook right and I had to scrap it and start over. Then when basing one of my 6 inchers I had just finnished and went to move it to its spot when SPLAT off it flips onto the corner of the counter. ( I quickly fix it and freeze it.) OK thats 2. Then I made a silly move and forgot to torte my cakes before I put them in the freezer. (Cut, Hack, Jab) So my 10 inchers started to crumb. Got that fixed, and in the freezer. Thats Friday (Party Sat.) Did I mention that one of my Wedding cakes is leaning just a little. Getting up early Sat. Morn. to finish shouldn't take me long.........SHOULDN'T. I only have three sheets left. After a long night going to bed at 1 and getting up numerous times to check on the cakes. One cake down no problem, think all is well, get to #2 of the day. What happens but the corner of the cake falls apart in my hand. Can I fix it......Yes I can. This would be the real meaning of crumbcoat. phew, that was close. I'm done. Time to deliver. Load them up, fill the car (I have an Excursion, it's hard to fill.) Head to the church. Get there no drama. Take the leaning cake down stairs. Side of bottom layer blows. Well I guess If after all of the little things that. And that was the only real disaster, I did OK. My friends were OK. I was able to make it presentable. I guess I just have to learn to take it one piece at a time.

Wow! You always think that those days aren't going to happen but, they do! I am so sorry it happened when you had all those cakes to do at once! I would've been a nervous wreck! But, you hung in there and got through it! Now it's time to relax and put up your feet. You should be proud of yourself!
