Ok, if you read my last post (Going crazy...just licensed), I mentioned that I decided to get licensed and my business partner and I took some cookies, pies, etc. to the Farmer's Market last week and barely started selling when someone placed a big order for breakfast items for 100-120 people for two mornings, plus a full size sheet cake.
So, today, we sold just about everything and at the end of the market while I was helping a customer, my husband answered my phone. When I was finished helping the customer, he said, "oh, there's someone who wants to talk with you about doing desserts for his restaurant and catering business." (Just as calm as can be!) I just about screamed at him--WHAT?!! What's his name, where, etc....and my husband said, I'm not sure, he just said to stop in today and talk with him. AH!
So, I just went to visit with him and he wants 4 fruit pies on Wednesday and a layer cake for Saturday to "try out" and see if he likes our pies and cakes and if we can work a deal that will allow us both to make some money!!! Then he mentioned that he has a catering event for 200 at the end of the month and would we be interested in making desserts for that!
Can you tell that I am just beside myself? 
We had absolutely no idea that this would happen when we decided to get licensed-I thought, "oh, it would be great to get my name out there to do some party cakes and maybe wedding cakes" but I never expected this! Turns out that someone who purchased items at our table at the market today works for this chef--the person was impressed with our goods and gave him our card and told him to call us. I just can't believe it.
So, in addition to any positive thoughts and prayers you can send my way, I'm looking for the best chocolate cake recipe you've got and your favorite fruit pie flavors!

First of all I would like to send you a great big, congrats on getting licensed. Second, take a very deep breath, and relax for a minute.
I am sure that you will do just fine. Things always seem like they come from left field when you are just starting.
I wish you well with your decision that you make, and that everything goes smoother for you. You will make the right decision that will suit where you want to be.
In a way, I wish I had your quandry. But then again, I don't know just how I would react either.
Most of all, don't forget to breathe. It really does help.
