My first time making choc. ganache & I didn't like the type that I made. I had read that you could use a box of instant pudding and add heavy cream and just mix it up. Well, I did that & it wasn't sweet enough or chocolatey enough. So I added so melted choc. & that helped the taste, but of course, the left tiny specks of choc. in the ganache. Next time, I think I will stick to using choc. chips or baking choc. & not try to take the easy way out. I did go ahead & use it on my cake. We'll see if the customer is a big fan of it or not.

The only ganache that I know of or use is melted chocolate and cream. It is yummy. I cannot see the pudding thing tasting too good.

Yeah.. I have never heard for making ganache with pudding.. it wouldn't be real ganache.. Chocolate and heavy cream.. that's the only ganache I know of. I hope your customer doesn't mind. Let us know what happens. icon_biggrin.gif

I would definitely not do the pudding thing. Doesn't sound too good.
Go with a quality chocolate and cream and you'll love it!

cream and pudding mix is just going to give you pudding. creamier than normal, but still just pudding. as others have said, you need heavy and cream and real chocolate.

Thanks,
I think I actually heard of using pudding on CC. Maybe I misunderstood? Anyway, don't think I'll use it again. Next time, I'll definitely use chocolate.

I've used a box of instant pudding and heavy whipping cream as cake filling, but not to make ganache.

whipping cream + pudding powder = mousse, not ganache. All ganaches are made with chocolate + liquid (cream, alcohol, etc...)

This ganache is wonderful! It's easy to make, and pour, tastes good, and stays shiny! Great recipe!

Yes, I know that this would make a mouse filling. That's what I had intended it for, not as a frosting or glaze. I probably didn't mention that in my original post. I had read in a "ganache" posting that a few people had used it this way, so I gave it a try. I know that this is not true ganache, and I will never call it that again. I promise (ha-ha) thumbs_up.gif.
I already have several recipes & tips I printed off from baking911.
Thanks everyone!
