I've decided what to do for the 4th of July but I need some advice/directions on chosing sizes for a stacked cake and assembling it.
I'm new to cake baking so I'll have to buying the pans no matter what size I choose, unless I go with 8" pans. What pans would make an nice stacked cake? I want to do 2 'small' layers stacked on 2 'large' layers. 6" and 8"? 6" and 10"? Something else? While I'm at it, I know that my son wants a stacked cake for his birthday and the more layers the better. I'm thinking I'll probably do 'only' 3 though (his picture has 7), so what would be a good size for a third (smallest) size?
How do I stack the cakes? Do I do the small cake on it's own board (of the same size as the cakes?) and then ice it and only then place it on top of the iced larger cake before decorating the iced cakes? What do I need to do to stablize the top cake? I've heard people talk about doweling. I'm teaching myself and don't know how to do that. Can anyone point me to some simple directions?
