I'm doing my first wedding (it's dh's family) this fall. I started talking to them about it the other day. They are both really laid back and casual so I'm thinking this should be fairly simple. Well, I was half right. She wants something 'very simple' but that's as far as I've gotten with her.

He wants an ice cream cake for an outdoor wedding in October in the South. At least it's not in July! Anyway, here's what he wants-tell me if it's possible or if there's any tips or anything else you can think of!

He wants a large chocolate chip cookie for the crust, covered in vanilla bean ice cream (a thick layer), topped with chocolate syrup. icon_eek.gif

Make it his Grooms cake and pull it out for the festivities. Tell him it just won't hold up as a regular wedding cake.

Sorry, he does want it to be the grooms cake. I guess I was worried it still wouldn't hold up. Do you think it will?

I agree. Unless they don't want the cake on display at the reception, then I would explain that it would not be something you could do.

I would make sure there was a fridge/freezer on the premises that was close to the site--and let them know that the cake will have to stay in the fridge up until the last minute. If you keep it in your freezer up until delivery time and then store it in the fridge up until the last minute I think it will be fine. However, I guess you'd have to make sure it wasn't still "too frozen". Hopefully someone will have some good advice that has more experience with these type cakes.

When I make my icecream cakes I use 1/2 gal ice cream, 1 4oz size pkg pudding mix and 1 3/4c milk. Then the ice cream thaw slightly then Mix together and freeze. You can freeze this in two lined 8in round cake pans. then do your cookie and use this to fill your "cake" it will only hold up about 15mins out of the freezer tho. But is a little more stable and tastes better IMO than just plain icecream and the combos are endless one favorites are vanilla ice and pistachio pudd; vanilla ice and vanilla pudding with oreos.

My suggestion is convince them Ice cream is a bad idea... Ok assuming that doesn't work make it a day or two early and put in your freezer to get a good hard freeze on the cake. Upon Delivery get it right back in the freezer and bring it out only for cutting. Good luck with this one

I would suggest to them to use this idea for a cute dessert at the rehersal dinner the night before. You could go with the angle that it will be so unique, everyone will want some and it just wouldn't be enough! Good luck!

I think a choc chip cookie sundae in margarita glasses for a dessert table, might be something different. An ice-cream cake will only hold a short time.

they definitely need to verify there is a freezer and that space will be available. If not, I wouldn't do the ice cream cake (well, I wouldn't do one anyway, but that's another story . . . lol)

Tell him you will stop and pick him up the giant cookie from Mrs fields and a gallon of breyers ice cream on your way with the beautiful wedding cake.
