She wants one dozen cupcakes around the Cheetah Girls theme. She has totally left the design up to me. One of her requests is that I do not ice them with whipped or buttercream. She wants the "old fashion" icing and I will be experimenting with a recipe from a book I bought. The other request is to write Cheetah Girls on the tops of the cc's. I would like to write out the words using chocolate but this is not something I have done before, any suggestions? I purchased some cheetah print ribbon to wrap around the cupcakes and put a gem on it using colored baking cups.

My other order is for a caramel cake. I printed a recipe from here and will experiment with it this weekend. I am not sure what to charge her for the cupcakes or the caramel cake. Your help is appreciated.

I'm not sure what you mean by the old fashioned frosting? Could you share the recipe?

Be careful selling something that might be copyrighted! Does anyone else know if Cheetah Girls is a copyright? I know Disney is pretty strict on that type of stuff.

I am thinking a cooked 7 minute type frosting is what is meant. That's what I think of when I think of old fashioned frosting..

Good luck! I'd charge $2.00 per cc at least.. more if you are doing the embellishments.

The carmel cake.. dunno.. what size?

If it is the seven minute frosting I'd add a bit to what you'd normally charge- that stuff is good, but kinda annoying to try to work with.

I should find someone who makes that and try it sometime. Never in my life have I known anyone who "cooked" icing. Sounds weird to me since I've never been exposed to it! icon_smile.gif

The icing she is talking about is just the old confectioners sugar icing. I got the recipe from my DeDe Wilson's Field Guide to Cupcakes book.

The caramel cake will be a three layer 8".

I think as far as copyright goes, you need to have something on the cake actually purchased from Disney, not just something you replicate. Like if you want to make a Thomas the Tank Engine cake, you can buy a toy or kit to put on the cake, but are not supossed to replicate it on your own. I'm sure you'll be fine though. I doubt Disney goes searching for things like that. I remember a thread on here that was very informative on that subject.

that old fashioned frosting is amazing! my great grandma gave that recipe to my grandmother, who gave it to my mom......who gave it to me. you have to be careful cooking it though. if you do it just a little wrong the icing will come out grainy. i use a glass double boiler. thats what they all used, and thats how i learned. if you do it right though that icing is amazing. icon_biggrin.gif

The cooked icing is basically a meringue.. it's shiny and sticky and sweet and really yummy..

1 1/2 cups granulated sugar
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/3 cup water
2 teaspoons light corn syrup
2 large egg whites
1 teaspoon vanilla extract

Combine all ingredients except vanilla in top of double boiler.
Place water in bottom pan of double boiler. Cook over high heat until water boils (3 to 4 minutes). Place egg white mixture in top of double boiler over rapidly boiling water (water should not touch bottom of pan); beat at highest speed with hand mixer until mixture forms stiff peaks (about 7 minutes). (DO NOT OVER COOK.) Remove from heat; add vanilla.
Continue beating until frosting holds deep swirls (about 2 minutes).

You can add 2 ounces of melted and cooled unsweetened chocolate to it too to make a chocolate version.. just fold it in after it's cooled.

You can also sub 1/2 tsp peppermint extract for the vanilla and make a peppermint version and add some crushed pepermint canies and a little red food coloring to make it pink.

For a coffee version sub 1/2 cup packed brown sugar for 1/2 cup of the white sugar and adding 1 tbsp instant espresso powder to the water.

Orange or lemon or lime version just sub an extract or some zest if you don't mind the bits in your icing.

Don't knock it 'til you try it.. It's also fat free (without the chocolate).

Sorry to hijack the thread.. LOL. but I love 7 minute icing.

I certainly will let you know how it comes out! I have so many pictures to post of past projects I feel ashamed. icon_redface.gif I lost the cord to my camera to transfer the pics to my gallery. I plan to purchase a new one soon.

I do not plan to use an image but copy their style of dressing. You know, when they each wear a different color jogging suit with some cheetah print somewhere on the outfit. Well, that's what I plan on doing with the cupcakes.

My grandmother always made a version of buttercream so I would make sure her idea and your idea of old fashioned is the same! icon_rolleyes.gif

I did a test cake before I make the real cake for my order and it came out ok. I used a recipe from this site and my daughter liked it although I think I let the caramel set to long and did add more cream to make it spread better. But the taste was fantastic.

The cupcakes were a hit! They were eating them after I delivered them to their home last night and the party isn't until later this evening. Some poor kid(s) will be without a cupcake!

randipanda...I will get you the recipe asap if you still want it. She loved it!
