Hello, I am doing a wedding cake for my friends wedding tomorrow, Everythign is done, icing made, cakes made, icing made, roses made .... can I ice the cake today and let it sit out over night or will the BC gettoo stiff sitting out all night ... the reception is at 3:30 tomorrow and I will be leaving to set up at 2pm. It is a pretty simple design and should not take long to decorate it wil take longer to ice and get the icing smooth than it will to decorate (it is all BC) so can I Ice the cake today or maybe ice the tiers today and not stack them until tomorrow? and maybe make a foil tent over each tier to keep them from getting too much air to them and having the BC crust too "crusty?"

THANKS!

I always ice and decorate on Friday with no problems and I use a crusting buttercream with Alpine. I normally set them out individually on my dining room table, with large plastic containers turned upside down to cover them. I stack onsite (too scared to transport!) I use the BakeryCraft SPS system, and already have the supports & plate in each tier before I deliver

thanks! I think I am going to have to stack prior to transport because there is not much set up time unfortunately, I will not have time to stack and pipe on the garland around the cake and place roses on in the short amount of time I have so I will just be transporting stacked .... I am sure it will be fine though (crossing fingers). I guess I will decorate today, and cover with cake plate cover or foil and then stack and do finishing touches tomorrow before transport.

I always feel like its better to completely decorate and let it set up at least a day for the bigger cakes that "have" to be transported stacked.. You need to give everything time to firm up or your frosting will be too soft and everything will be sliding all around during transport.. My suggesting is decorate today and let it get nice and firm then transport tommorrow.

so would you recommend stacking it today too and leaving it uncovered or stack tomorrow morning?
