OK Bakers...I have a big order here. I have a friend who has a child who is allergic to eggs, and is lactointolerant. She needs a cake with no butter, no eggs, no dairy. I also need an icing with no dairy or eggs. That means egg whites too! I am at a loss.

Anyone have any ideas (no spice cakes either!) detective.gif

Thanks in advance for any suggestions!

Hi there! I just recently came across a website for a company that makes cookie/cake/icing mixes for people with food allergies/sensitivities. The products are a bit on the pricey side (but I guess all specialty items are these days!), but they are available to purchase at the website as well as at most of the large grocery stores across the country. Why not use the Wilton buttercream?

1 lb sifted confectioners sugar
1 Tbsp meringue powder
1 cup Crisco (white)
2 Tbsp water (for thick consistency, 3 Tbsp for medium, 4 Tbsp for thin)
1 tsp vanilla
pinch of salt.

Sift powdered sugar and meringue powder together. Cream shortening, vanilla, and water, gradually add the dry ingredients. Mix thoroughly on medium speed, blend an additional minute until creamy. If you are using this to frost a cake, remember to use the thin consistency icing.

It does have meringue powder which I've heard can often be used for people who have allergic reactions to eggs. Otherwise, this recipe below is also light and yummy!

1 cup margarine (room temp.)
1 cup shortening
2 tsp vanilla (I would use clear)
3 cups powdered sugar
1/4 cup flour
1 cup powdered sugar (if necessary)

Whip margarine until smooth.
Slowly add 1 cup shortening.
Whip until fluffy.
Add vanilla, powdered sugar and flour.
Whip until smooth.
May add up to one cup more powdered sugar to increase stiffness of frosting.
Decorate cake as desired

I normally add butter instead of margarine, and do a combo of vanilla/almond extract. Makes me think of a sugar cookie!
