Wedding Cake Filling Question .............

Ok, I dont do wedding cakes much. I have done a couple of small ones but this is my first large one, for 125. So those of you out there who are wedding cake queens I hope you can help. I am wondering if my customer wants just almond poppyseed cake with cream cheese frosting. Would you layer and fill or just ice it? I wasnt' sure what was the right way or if there was a right way or if it was just a preference thing.
Any help would be much appreciated.

All my tiers are 4" high. I make (2) 2" layers for each tier. I then level and torte each cake with my Agbay to give 4 layers of cake and 3 thin layers of filling. More stable in my opinion and prevents cake bulge. Cream cheese icing can get pretty soft setting out and I find it works best doing the thin layers instead of one big thick one.

I would think you might want to layer it as well..

I bake 2- 2" layers, and do one filling for a 4+ high tier on each.......you also might want to forwarn the customer that poppyseeds will show up in a drug test 48 hours later as positive for Opiates, so if guest would have a random drug test on Monday morning (assuming a Saturday evening event), they could be in trouble........see here:
