Earlene's Cream Cheese frosting, royal swirls and silk flowers. Loved the floating cake stand (50% off at Michael's) but the top tier holder tilted under the weight of the cake icon_sad.gif The bride loved the cake but I was a mess worrying about delivery, set-up, kids poking their fingers in it, etc but the thing I worried the most about was the cream cheese icing. How long can a cake iced with that sit out? I was stressed out wondering if the three hours it wouls sit before they ate it would make people sick. Does anyone else use this icing?

I would keep it in the frig till the last minute before delivery and it should be fine as long as it is in an air conditioned room.

Beautiful job! The cream cheese frosting can sit out (indoors) for a long time. Unless it's outdoors in hot weather, it should be ok. It would not be a danger as far as the ingredients spoiling, but it might be an issue with how it holds up if it's too warm in the room. Get ready for your next paid orders! icon_smile.gif

gorgeous cake! i love pink roses!

on the cream cheese, it can safely sit out for 4 hours before bacteria start growing. can you tell i just finished a saftey and sanitation class? lol

Thanks for easing my mind. I wondered if the sugar content would help make this icing safer - but since your reply's I can sleep tonight and if anyone gets sick at the reception, it just might be all the booze they had there!!
