Fillings Shelf Life Questions

I plan to use these filling from this website for fillings for my final cake. If I make them today do you think they will be good til Monday. I plan to make the fillings today and keep in the fridge til tomorrow when I ice the cakes but will they make it til Monday once cakes are iced i will of course store in fridge as well.

I am sure they will be fine, but bumping you up so you can get a more expertise opinion, since I have never made any of those.
Surely they would have to last awhile, shoot sometimes we have cake sitting around here for a week, and we still eat it without getting sick or anything.
Well it is 7:33pm here and I haven't made the fillings yet in fact I am falling behind so I guess filling will be good for Monday If I make them tomorrow
