im makeing royal icing and i dont know if its ready, its been on the mixer for more than 20 min( btw im using a paddle attachment) and its still very sticky. should i add more sugar? or just leave it alone? icon_confused.gif

If you pull the paddle out and a stiff peak of icing forms without wilting then it's done. If not then you may need to add more egg white or sugar. If it's humid you may just need more sugar then the recipe suggests.

its really humid here. im in miami florida. ill try more sugar thanks

Definitely more sugar.

I found that the recipe in Wilton's is ABSOLUTELY true when it comes to the recommendations for using a standing mixer - use 1 Tbsp less water. If you don't you end up with a sugar glaze, not royal icing. I learned the hard way...a couple of times icon_lol.gif.

I'm in s fl and always add less water than wilton's recipe calls for. i've also found that I have to turn my mixer on med-high and walk away for a few minutes.
