Can Cream Cheese Frosting Sit Out?
Decorating By EverlastingSweets Updated 5 Jul 2007 , 6:06pm by JennieB
Hi all!
I use the Crusting Cream Cheese recipe all the time, however, I usually use it on cakes that will be delivered the same day.
I've got a wedding cake due on Saturday, and they want it delivered tomorrow evening (the wedding is at their home)
Will the cake be okay from Friday night to Saturday afternoon sitting out?![]()
I would refrigerate it Your dealing with dairy in the summer and its too easy for the bacteria to grow. The last thing you want to do is have the icing curdle and get everyone sick. I would say have them put it in the fridge until a couple of hours or the morning of just to be on the safe side.
Here is a link from a previous thread on this subject it all depends on your recipe

thanks! This is the recipe I use, since it doesn't have that much sour cream and butter, more powdered sugar than anything, I was hoping it would be okay![]()
1 cup butter, softened
1/2 cup solid vegetable shortening
1 pound cream cheese, softened
1 tablespoon clear vanilla extract
3 1/2 pounds sifted confectioner's sugar
1/2 teaspoon salt
Here is the recipe they used on that site for an example since yours has more sugar in my opinion I would say it would be fine. Like I said this is not my research I just copied and pasted it from that site I listed above.

Cream Cheese Icing:
INGREDIENTS:
1 stick butter, softened
1 (8-ounce) package of cream cheese, softened
1-1/2 teaspoons of vanilla
1/2 to 1 pound confectioners' sugar
milk, if necessary
I will make calculations... however the frosting recipe will need to give a definite amount of sugar, can't be a range like the one below of 1/2 to 1 lb of confectioner's sugar. At the low end, it will probably need refrigeration at the high end, probably not. That will need to be emphasized for those referring to these answers.
