Can I freeze some leftover chocolate ganache?

yes, you can...just put it at room temp for a few minutes before using it.

mine never makes it that far, you can whip it and use as a filling, add to BC for yummy choc. bc, or my favorite yet whip and put in choc. shells for great truffels!

That sounds yummy. How do you whip it? Do you add anything or just whip it up?

No, you don't add anything..when it's soft, just whip it to fluff it.. icon_smile.gif

Do what I do... Make it and then just sit there and eat it all shhh.gifthumbs_up.gif Man I am terrible when it come to ganache. Half the time it never makes it to a cake icon_redface.gifshhh.gif

What about freezing it after it's on the cake... does anyone have any experience with that? I have to do a large ganache covered cake and I like to do them a week ahead and freeze them... do you forsee any problems?

Going from experience the coating can crack, sweat, and discolor, if u freeze a ganache coated cake

Thanks for that info... I wouldn't want that to happen to this cake. I will just frost it and freeze it, then pour the ganache the night before.

icon_lol.gif I hear that! I made it for the first time on Thursday night. My goodness, that stuff is GREAT! I poured it into a squeeze bottle, and what didn't fit was mine. I had the pan scraped so clean I almost didn't have to wash it.

same here the only 1 I ever use now
I am very lucky I don't gain weight or I would be very chocolate obese
