I have a wedding next weekend and the forecast is calling for temps near 100 degrees. Will fondant hold up in this weather. It will be outside around 5:00 p.m. I will use only criso for my buttercream crumb coat, but bride wanted a non-dairy whipped topping moussefilling. What do you think?

for that kind of heat, i'd tell her its unwise to go with something like that. even if spoiling wasnt an issue, it will break down or melt at that temperature. i'd recommend to her a buttercream (as much as i dislike that) its probably the sturdiest option for a HOT outdoor reception. i think the fondant will be fine and actually helpful, but i 'd set up the cake as late as you can so its not out there too long. is it humid? what kind of fondant? those factors will play a role.

I will be using mmw fondant. No there will not be any humidity. (CA)
she is going with a raspberry filling in the white so I will try and talk her into the rasp/buttercream for the chocolate too.

something to htink about when booking cakes is that what the WANT isn't necessarily what you are able to provide given certain weather conditions. at the least, if they insist on a mousse filling in that kind of weather for an outdoor ceremony get a signed release stating you can't guarantee the cake will hold up under those conditions and as long as you deliver it as agreed then you have no furhter obligations.
