Ok so I have already made a 2 tiered stacked cake and just assembled it at home and brought it to the party. BUT if I do 3 tiers and dowel all layers and do center dowel, Can I do it at home and bring it assembled or should I put it together at the party??
Also are the cake boards supposed to stick out from the cake 1/4 inch or am I buying the wrong size, or not icing enough? In the Wilton books how to section you can't see the cardboard sticking out. But the 6inch boards still seemed to stick out from under my 6 inch cake. So I had to do extra big piping around the base of the cake to hide the cardboard. The cake was iced and then covered in fondant and the cardboard still stuck out a bit.
I am new to this whole thing so any help would be greatly appreciated! TIA!

Assemble it at the party. Get there ahead of the scheduled event and get it set up. Do not transport it to the event on pillars... it will fall, slide, crack at the first hard turn you do.

Trim off the excess cardboard cake circles until they stick out about 1/4 of an inch then hide them with a border.

Good luck.

When I did a 3 teir stacked cake, I put it all together and then transported it very carefully to the site. It was fine as long as you drive carefully and package it right. Put a slip grip on the bottom of the box so the cake can't slide.

As for the boards showing, I think it depends on what your customer wants. I've made them both ways and they both looked good. Just make sure your boards are wrapped in something nice if they're going to be showing.

Are you using Wilton pans and boards? I haven't had any trouble yet and I just assumed it was b/c I was using products all by the same manufacturer, kwim?

I have a 4 tier (yikes) cake to do in October and dread the thought of assembling it all on site. I was thinking about stacking the bottom 2 layers and the top 2 layers at home. Bad idea?
