New ...with A Couple Questions

Hi!

I'm new with a few questions...i've completed the 3 Wilton classes and have a few ?

I've seen posts about using the papertowel/dishrag to level the cake when it's fresh out of the oven....I usually use the wilton 8" round that's 2" or so deep...do you just press down on the cake until you eyeball it to be even? Not sure if i need a filler for the cake batter (I used boxed cake mix) but my cakes always seem to not bake up to the top and this method might be a little tricky but I HATE leveling cakes!!!

Also..do yuo use the bake even strips or flower nail trick??

Just one other quick question...if you do a crumb layer..how long do you usually let it sit (for some reason I think i've been trying to move onto frosting too quickly and not letting the crumb layer set enough!)

Sorry I don't know about the cake leveling technique!! I don't use even strips - I make my cake layers tall and just cut with a serrated knife and it works very well. Don't fix it if it's not broke, right?
As far as the crumb coat - it usually takes 15 minutes to half an hour, but if there is too much liquid ingredient in the icing it won't ever set quite right. Once you make buttercream enough times you'll know the feel for the right consistency.

Welcome to Cake Central!! It sounds like you aren't putting enough batter in the pans if they are not baking all the way to the top of the pan. I find that 1 cake mix is not always enough for 2 8 inch pans so I will use an extender with the mix so I get plenty of cake. I don't use the dish towel leveling method either, I use a serrated knife.

I have bake even strips but rarely use them. I do use the flower nail in my cake pans though.

I crumb coat my cakes and generally wait about 10-15 mins., sometimes I will pop the cake in the frig if it is really hot.

If you use baking strips you will never have to level a cake again. They are wonderful. Just soak them in water and put them around your cake pan. Bake as usual. Probably you will have to leave the cake for 5 more minutes in the oven or so.

I agree with dydemus, just wait for about 10-15 minutes for your crumb coat and it will be ready for the rest.
