Choc. Dipped Strawberries...how Far In Advance?

If I were to dip strawberries in "Candy Quik," cheaper candy making chocolate, how far in advance can I do this? I have heard you are not suppose to refrigerate them after dipping. Is this a problem. They are to go on a cake for tomorrow morning, and I would really like to get them done tonight. Thanks...

You need to do these at the last minute. The sugar in the chocolate will macerate the berry and cause it to weep juices.

I agree..last minute. Once I did them a day in advance and it was a mess, the juice ran alot. I ended up having to redo them at the last minute.

Last possible minute, and don't refrigerate.

I did some for a wedding cake the morning of the wedding, and by 4:30 they already looked less appetizing--they lost their shine and were starting to look dull. They said the berries were great, but I wasn't thrilled with the way they looked, even doing them then. I won't look forward to doing them again...

Would a chocolate fondue set work the same way, dipping the strawberries and harden? I wandered if anyone thought what the best buy would be?
