Hey-- I've had a few different people ask me to do cake squares--They are not wanting petit fours... so I guess just squares of sheet cake (but maybe not as deep?) -- I don't know. So far, I've just done mini cupcakes instead.

What do you do for these requests? Do you frost a thin 1-layer sheet cake, freeze & cut? Can you use regular cake mix or do you make pound cake? I would love to hear what you all do. Thanks!!!

When I make cake squares, I make them in a jelly roll pan. It usually takes just 1 box mix. I bake it, then freeze the layer for 15 minutes. Frost and smooth. Freeze alittle more so I don't get crumbs in the frosting when I cut them into squares. Use a hot knife and wipe after each cut so you don't get crumbs in the frosting. icon_biggrin.gif

I was reading in the 2006 Wilton Year Book and there are directions where you cut a sheetcake into squares then dip the squares into melted candy melts...just my .02

Thanks momof4luvscakes- I may try that.

Dipping has never worked for me in the past-- I wish it would! I've never been able to get a smooth finish. That's why I gave up on petit fours.
