Stacked Cake, How Many Layers Each?

I'm attempting a three-tier stacked round cake for a wedding shower. 6, 8 and 10-inch rounds. Here's my question: Do I need two layers of each size?

If using 2" pans, you will need two layers of each size. If using 3" pans, you can one cake for each size.

That's what I was afraid of. I stacked up the pans and it just didn't look right, too puny! Man, now I've got to go out for more cake mix! Did I mention I'm decorating them TOMORROW for a shower Saturday? Ack!

Any advice on stacking each of the two-layers together?

Thanks. I've got my dowels, so I'm set there. *crosses fingers* I guess I meant any suggestions on the filling between the layers. I guess I could always use buttercream but I'm wondering about jam...it's a plain French Vanilla cake. Maybe raspberry preserves? I'm open to suggestions! My plan is to take the current 10-inch out of the oven, cool 10 minutes, throw another one in and run to WalMart at lightspeed. Fortunately my WalMart is a stone's throw away and there's definitely no traffic at this hour!

This is the recipe that I use.

2 blocks Philadelphia Cream Cheese (1/3 less fat works well too but not fat free)
1 tsp Clear Vanilla
Sugar (I never measure it, but I put in a lot so it's sweet. You should try 1/2 cup and see if that is sweet enough for your liking. If not, gradually add more until you've reach your desired sweetness.
1 8 oz can of crushed pineapple


I use this recipe FOR A LOT OF THINGS!! If you want it fluffy, add cool whip. I don't know how many cakes it will fill. I'm guessing at least 2, 2 layer cakes. Maybe more. Let me know how it turns out.

That pineapple filling sounds great! Can't go wrong with anything and cream cheese!

I ended up using seedless raspberry jam and cool whip. Yummy!

Here's the final product. I wish the icing was a bit smoother but an OK first effort, I think icon_smile.gif Definitely a learning experience.

Great looking cake. The raspberry filling sounds delicious. I have to try that some day.

Can you use the cool whip with other flavored jams?

I've used the raspberry filling from the Wilton site. It's very good. And it's a big hit with everyone I've made it for.

I imagine you could use it with just about anything. I was thinking about maybe an orange marmalade for Halloween.
