To make a strawberry shortcake or a similar cake? I am interested in the stabilized whipped cream, but will it hold up to some heat? I want it to taste like whipped cream but hold up like BC. So any suggestions would be great. I also need to make flowers, am I better off to just do them in BC?

i would use the WBH house BC. it has a great whipped cream texture, but it is mostly shortening, so should hold up well. i would also recommend using hi ration shortening in it. it will hold up better, and gets rid of a slightly greasy feel.
