Hello.
I'm pretty much a newbie and need a little assistance. I have a request to do a cake similar to the Wilton Course II final cake. How much should I charge? I plan to model it after the picture somewhat. The cake will be chocolate with a raspberry filing. It's for an anniversary celebration. Also, how should I slice it? Are there any guides available for slicing different shaped cakes?

Not familiar with the course II cake you are talking about. But the slicing guide you can find in any Wilton yearbook

As for what to charge - I'd say between $20 - $25 - I don't think that size cake serves a lot of people.......maybe 13 I think is what Wilton says here:

also check out www.earlenescakes.com and Dede Wilson's books for info on cutting. Apparently 'caterer' size slices, like for a wedding cake are 1/2 of what a regular cake slice should be. I don't make cakes for less than $20 - and by those catering guidelines an 8 or 9" cake serves 18-20. Hope that helps.
There is much discussion on this board regarding the differences between Earlene's and Wiltons serving sizes. I find that in general, wedding cake slices are the following dimensions:
4 inches long (4inch tall tier)
1 inch wide
2 inches deep

All I know is the Wilton 11 final cake is really small maybe a larger oval pan will do I found baking 911 has the serving for all size pans

I just wanted to let you all know that the anniversary cake I did over the weekend was a hit!

You know I just made a cake in that pan..they say it serves less, but really it takes 5 cups of batter, the same as an 8 inch round 3 inch deep pan.
