I grew up in a little town in NJ. This is many years ago. We had a German baker in town that made the best creme donuts I have ever had. The filling was thick and creamy without being too sweet or having that shortening feel and taste to it. Anyone have any ideas what kind of filling it might have been? I've been trying to duplicate this without any success. Would appreciate any input.

The filling sounds like pastry cream.....like used in many of the Italian bakery desserts. You could find a recipe for it on almost any of the recipe sites....Food Network, Epicurean, etc....

Thanks for the quick reply, but unfortunately, it is definitely not a pastry cream. It is similar to the crisco fillings in donuts found at Dunkin Donuts or bakeries or super markets. It is just not so sweet or greasy as those. I'm stumped.

Sounds like they used a hi-ratio shortening.
