I got busy this week and tried five new cake recipes (was shooting for six but couldn't find some of the stuff I needed!). Thought i'd share because I always like reading other people's reviews so I know what's worth trying.

Pink Lemonade - Used the WASC recipe but subbed 3/4C of frozen Pink Lemonade for part of the water and added two tsp grated lemon peel. I saw a Pink Lemonade recipe on Wilton's cupcake recipe that made me try this.

I baked a billion cupcakes and forced them on my family, DH's family, and the guys at work and here's what they had to say:

Strawberry Cheesecake - A huge hit w/ my mom and my Dh's family. I"m not sure the guys at work TASTED theirs as they just woofed them down.

Key Lime - Definetley have to like Lime in general for this one, but I really like it and everyone else did as well. My only concern was it was really um..."fluffy" and i'm not sure how well it would stack. When I use any kind of box mix it's always really doctored so it's more dense than this. Never tried to stack box mix cakes before.

Tropical Dreams - I really like this one, but I dont' think I could eat a lot of it. More like a once in awhile treat. I think it would be good w/ a pineapple filling to balance out the banana taste a bit. My kitchen smelled really good though. Took me a few stores to find the coconut cream yogurt though.

Chocolate Fudge - I could have ate this whole cake by myself w/ no frosting at all. WOW is it good! Had to go to three different stores to find dutch process cocoa though. Still worth it, man it was good!

So I tried out all the new flavors and my wedding cake for this weekend just wants white and chocolate lol. Oh well, at least I can use the chocolate fudge one!

Sounds yummy!! I am actuallyy starting some trial chocolate cakes this week as I want the perfect one for this wedding in six weeks as it is the only dessert -- no dessert table - just wedding cake which will be cut within the hour after supper.

5 cakes in a weekend - you are my hero. Thanks for sharing your reviews as I seem to get stuck in a rut and bake the same thing over and over; perhaps this will inspire me.
