Do I bring strawberries to room temp to dip or do I dip them cold? I have melting chocolate and need to get them done soon. Thanks for the help. icon_confused.gif

I bring mine to room tempature and make sure they are dried with a paper towel. Not sure if it makes a difference but I've read posts before where others had trouble with seeping... good luck.

I bring to room temp, dry them, then dip in good chocolate not candy melts. Hold by the leaf and be gentle.

Is the almond bark okay? Or semi-sweet chips? Or should I buy the dipping chocolate? icon_confused.gif

I use bar chocolate and chips. I have only decorated over the chocolate with almond bark, I have never used any to dip. But try it, it may work.

Thanks! I have to make some for a groom's cake for my neighbor, this weekend. I hate strawberries, so never thought about it before! I'm like my nephew, who was 6-7 at the time, when brought choc cov'd strawberries for dessert, he replied, "why would anyone mess up perfectly good chocolate with strawberries?" LOL!

Funny you should say that, I don't like them either! icon_lol.gif

I use chocolate almond bark all the time for mine. Clean them, leave them at room temp, dry them with a paper towel, then dip and wipe excess off the bottom when pulling it out of the chocolate so there isn't a large build-up of chocolate once it sets.

You can dip them when they are cold, the chocolate sets up rather quickly this way. However, because it sets so quickly, you do run the risk of having the chocolate coating crack on you.

By the way, I have only used the candy melts because I was afraid that the chocolate chips or other chocolate wouldn't set up. Can I just melt some chocolate chips and dip the strawberries? Will they be a little dull?
