I'd really like to go to culinary school specifically for cakes, but I can't seem to find one around here that is credible!!! If anyone knows of anything, please let me know. Thanks!

Have you tried looking into Luzerne County Community College? I know they have a pastry arts program that is tied into The American Culinary Federation. If it is set up the same way my school was, ( most likely...the ACF model) you can complete your apprenticeship while enrolled in school and are eligible to take the certification tests upon graduation.

I'm close... down in Reading... I found a school for culinary down in York... but their pastry program is not for a degree, only certification, and the day that I was there they were doing Wilton CI-- I was very disappointed. It seems that they would taeach a lot on chocolate and pastries, but not so much on cakes. I just wasn't impressed-- but check it out== it may be what works for you.
