Ok I just made the choc mousse IV cake for my husbands fathers day cake.. just to let you all know...mousse isnt really good for decorating but it sure does taste great. We couldnt wait to get into the cake so it was cut. As of right now, this is my husbands favorite choc cake..... the whole time he was eating he was ooooing and ahhhhhing and saying it was good... my secret was I made the tres leches milk mixture again to put into the cake.....this time it was just reg flavor leches not choc like what I made last night for a friends fathers day cake..... the milk mixture gave the choc cake a little more "umph!" if you know what I mean..... I liked it so much I had to have a drink afterwards...(I have always had some mixed drink after a great dessert) this time it was a bahama mama...
Ya know I got to thinking.... it's a good thing that I wasnt on a diet this week if I had been it was totally messed up after cakes!
depending on the mousse recipe, mousse can be excellent for filling and frosting. you have to let it set up a bit first, and i wouldn't use it to do any intricate piping work. the mousse recipe in the chocolate mousse cake IV looks rather complicated and very soft and very sweet.
i like to use 350g chocolate melted with 1 tbsp butter, cooled, then slackened off with a few spoons of whipped cream (2 cups liquid whipped up), and then the chocolate mixture blended into the whipped cream -- the chocolate sets the cream, and the mixture firms up on standing (needs to be stirred if used after setting). no eggs, no gelatin, no fuss. ![]()
actually the mousse was a great consistency, not soft really, but I will say it was great tasting and when I wanted to play around the mousse did ok for decorating, but not as good as you would want for a paid cake..... my kids ate the rest of the mousse and said the "pudding" tasted better then the other pudding.... my youngest had it all over his face!!!! ![]()
