I'm going to make a baptism cake for my nephew and I'm not sure how to go about filling the cake. It will be a cross cake using a cross pan - do I make 2 cross cakes and layer them so that I can put some kind of filing in them? Any tips on transfering the top layer so that it doesn't break?

I would just try to torte the cake. I don't thing the cross pan would stack well. Make sure you do a bc dam

I agree. I would torte the cake too. When I first started making cakes, I would flip the top layer when torting. Later, I realized it was much easier to slide the top layer onto the back of a cookie sheet and then just slide it back on. Much easier to line the layers back up and no where near the risk of breaking the top layer (especially with the cross)! The "Airbake" cookie sheets work great because they don't have sides on them. They're flat and slide right between the layers.
