What To Do With Left Over Royal Icing...

Do you guys ever have left over royal icing and if you do what do you do with it. I think Antonia's recipe makes approximately 4 cups-5 cups. I probably use, at the most, 3 cups. What can I do with the left overs? TIA
I don't know that recipe, but can you make just half a batch when you make it? Then, you won't have so much left over. If I need to make some flowers, I make a half a batch and then use up the whole batch to make lots of extra flowers and save them. Every so often, I can just use what's already made and not have to make any new ones.
Royal icing doesn't need to be kept in a freezer. Just let the flowers dry, then store in a carboard box in a dry place. (I use a pizza box). They keep for years

I've read on here that you can freeze the cookies already decorated with Antonia's icing, I have a couple test cookies in the freezer now because I just have to try it for myself, LOL!
I've been thinking that I should make some simple decorated cookies that say "thank you" to keep on hand, and give one to each person who orders a cake, for two reasons. First, to say "thank you" for the order, and second (and most important) to get people who are already willing to pay a decent price for a cake to taste my cookies! Could lead to more business down the road, and would be a nice gesture either way.
Also, Antonia's icing will keep for quite a while sealed in an airtight container. I've used it as long as a month after making (using the meringue powder, not egg whites!) and it's as good as the day I made it.
Laura.
