I have to make a cake for someone who will not use crisco because of health reasons. Has anyone made buttercream with the shortening from Earth Balance? Does the frosting work the same way? Do you need to make any subsitutions etc? And would it work as a good base to then cover it with MMF? (that is persuming they will eat that!)

Earth Balance is like Smart Balance (i think they are the same company). It is basically a shortening and or margarine that is vegan and has no trans-fats or partiallly hydrogenated oil in it.
I have got to belive that someone out there is really health conscious and only bakes with it. Anyone?

I am not familiar with this product myself, but probably someone on here has tried it before. Even if you get a response your best bet is to make a small batch of frosting yourself. This way you can taste it and get a feel for the texture. I always like to try a new recipe before I actually make it for someone else. Good luck!!
I have used smart balance and it works really well in baking - can't tell the difference. For buttercream, it will make a softer buttercream and you'll have to use less liquid and a bit more powdered sugar, but it tastes pretty good, not as good as using butter, and I like to use 1/2 and 1/2. You'll probably need to experiment with it a bit and see what works for you, but it can be done.

i am a vegan baker who has always used Earth Balance - it is definitely the best substitute for butter on the market.
i have made many buttercreams using earth balance. if you use the earth balance that comes in a tub, you will have a very soft buttercream and it will melt very easily. i have found that this problem is easily solved by using the earth balance sticks. they have a higher melting point so they will make for a much better buttercream.
i base my buttercreams with earth balance sticks, organic powdered sugar (if you're cooking for a vegan they may prefer organic sugar - but i've met many vegans that don't care about the whole sugar issue so it might not matter and i'm sure this person would have specified already), soy/rice milk. i add vanilla for a vanilla buttercream, peanut butter for peanut butter buttercream, etc.
my first couple vegan buttercreams weren't so good and i think it was because i used the tub. definitely go with the sticks!!
