I have had the same problem when I take them out of the fridge. I've started to torte and put in the fridge, then take them out as late as I possibly can wait to decorate, then not put back in the fridge, just keep them out until I deliver. But I'd love some help with this problem too...

First, make sure you are using pure confectionary sugar for your icing. If it doesn't say 100%, it is probably beet sugar and that causes cakes to condense. Also, I heard if you leave them out for awhile, the condensation will just evaporate. HTH

If you freeze your cakes. leave them in the wrappings to thaw out, so the condensation collects on that rather than the cake.
