Need Help Quick!! Making Mmf For First Time...

I am making my first MMF (large batch, like the tutorial on here) - should it be sticky at all?? After reading tips in a forum search, many people said not to add the whole bag of sugar -- yet, I've put in 2 lbs plus some, and the dough is still somewhat sticky when I take it off the hook (using KA instead of kneading). Shoudl I keep adding sugar, or will it set a little better after the marshmallows have cooled and I leave it overnight?

let it cool just a little......i make mine in my ka and it usually is a little sticky on the hook, but then i knead it a bit and it is fine. I also rarely let mine cool overnight (shhhhh....don't tell) icon_smile.gif

Wrap it well and let it rest while you clean up your bowl. You will be suprised how much it will change in that amount of time. As long as the marshmallows are even warm it will be sticky.

Thanks guys - I went back in to check it after waiting for some posts, and it's much more fondant-like already. Hopefully it will be in perfect shape when I go to actually use it on Friday.

Something else that I do - I don't bother to start mixing with the paddle and then change to the dough hook - I just do the whole process with the dough hook. It's a lot easier to clean up one attachment than 2, and I think it actually mixes better using only the dough hook. And I don't usually let it sit overnight either - as long as it has had a chance to thoroughly cool, it'll be fine! thumbs_up.gif
