You know, I knew a long time ago all ovens were not created equal- and some are hotter than others- you know, reading recipes throughout the years the comments are made in the 'notes' or whatever.
Not til I started reading the Cake Bible and other books like Joy of Cooking I think even has it too, the mention of calibrating your oven.
Well I've never had any disasters (knock on wood though now I'm thinking that's why some of my cakes have been a bit dried out lol)-
I finally broke down (for 4 bucks who can resist icon_redface.gif ) and bought an oven thermometer- and decided to be a pro - I'm sure all of you have done this already cause you're SMART LOL- so guess what I found??? HAHAHAHA my oven is 50 degrees hotter than it should be LOL OMG I would have maybe thought a few degrees but 50?? LOL I'm laughing still whenI opened hte oven lol

ok so make sure you fork out 5 bucks (Walmart or wherever) and do this- cause uh well the books say it's important- and I think I Shall no longer have a dry cake on my hands now icon_biggrin.gif lol

Very true. I rent an apartment and I hate my oven. It has no window! I quite often get overbaked cakes, not because of the calibration being off (thanks to my trusty $5 thermometer), but because I can't see how the cake is doing.

OMG I'm not alone LOL I have a tiny apartment kitchen. I pretty much have room to open the fridge and stand in front of the stove and open the oven and turn sideways to do dishes and use the tiny counter icon_lol.gif The oven has no window on it either GRRRR @ having to keep poking head in once in a while- I feel like Hansel and Gretel LOL

Good move by both of you. Many of the problems people complain about are due to the oven being off. Try making a crown roast of pork with an oven that was 60 degrees colder than the dial. I was beginning to think I had really forgotten how to cook.
