Question About Freezing Mini Cakes

I'm making mini cakes for my sister in laws wedding shower. chocolate cake (3 little tears) with raspberry ganache filling.
i want to assemble the cakes with the filling ahead of time, then cover them frost them the day before.

can i freeze the assembled cakes with out the outer frosting?

if i use the white poured fondant to cover them will the chocolate cake show through?
i could also color the fondant in her wedding color.
or should i cover it in poured ganache?

this is my first time doing the small individual cakes

I am working on 200 mini 3-tier cakes for a wedding right now. I baked them all over the weekend - and filled them all (although mine were baked in a cupcake type pan - all 3 teirs together), just squeezed the flavored buttercream in. I've done this before - they freeze well without outside frosting as long as you wrap them VERY well. I use both saran wrap and heavy duty foil. When you take them out - let them defrost completely before unwrapping - and ice as usual.

White poured fondant will not cover chocolate cake well. I'm making half chocolate/raspberry with dk. chocolate ganache poured over, and half champagne/strawberry with white chocolate ganache poured over.

Where did you find the 3 tier in one pan ? I've been looking for something like that - thanks.

Well, I ordered two pans - 6 wells each from sugarcraft.com. They were quite expensive $30 a piece. One was slightly bent - and they said they didn't have any more to replace them, the vendor didn't show at some trade fair this year, and my only option was to return it. I needed them for this wedding, so I kept them.

So, unfortunately, I can't help with where to find them. Sorry. With this volume, though, I didn't want to assemble them. I have an insane amount of hours just in the baking (I can only bake 12 at a time!).
