This is how I would do it too. Easy to do and tastes good 
I never thought about just using the pudding mix, that's a good idea. But I have used the no bake cheese cake mix before and that did well. That would also eliminate the need to use the heavy cream. And it takes fruit mix-ins well also. If it's not going to be warm, you could also just do cream cheese and whipped cream. Just cream the cream cheese in your mixer and add in the whipped cream and a little sugar.
