Hi Everyone,
I am not sure how to go about this so I'm hoping you all can help. It's got me all confused.
I need to make round cakes that have two fillings inside. That's easy. But how do I go about that when I have 2" high pans? Each layer is 2" X 2 layers= 4" tall. Got that part but I need it to be:

cake
filling
cake
filling
cake

Which mean two layers of filling and 3 layers of cake. The only way I can figure this out is to either torte the top layer, fill that, then put the 2nd filling on top of the bottom layer, then stack. But that makes for uneven layers of cake. Are you confused yet? icon_surprised.gif

The lady suggested I torte both layers of cake which makes 4 layers and just toss the extra layer since I only need 3. HUH?! Toss? I think not! Granted, it could be used for cake balls but that's not the point.

I don't have 3" high pans so that's not an option and I really don't want to bake 1" high cakes three times. ( there will be 6 cakes total so that's a lot of 1" high cakes!) Please help me figure out the best way to go about this.

Many thanks!
KimAZ

If I understand this correctly you need to make a total of 6 cakes, each torted with 3 layers and 2 fillings. I would bake my cakes in the 2 in pans and fill them 2/3 full so they will rise to the top. Go ahead and cut both cakes, you will have one extra, save that extra for your next cake, for every 3 sets you bake you will have enough extras for another cake.
