Should buttercream or other icing be used under chocolate ganache or can it be iced with just ganache?

Just the ganache alone is fine. That's the way we did them at the chocolate shop I used to work in.

ganache works fine... i like to use ganache as a filling, ice in bc and then glaze the cake in a shining chocl glaze though. You just can't get a better shine then that icon_biggrin.gif

Jastaus what is the shining chocolate glaze? Is there a recipe for it? Could it be used over fondant icing. The chocolate fondant icing is so dull and I would like to add a shine to it.

no i would not use it on fondant but you can give it a try i guess.

450 grams bittersweet choc, chopped
330 grams butter
2 table spoong light corn syrup

melt all over a bain-marie and use at approx 100 deg F pouring it over the smoothly iced and set cake and try to only swip the top with and off set once to make sure it is really smooth.

Thanks! Now, does anyone prefer a certain ganache over another? I have tried one listed here before and wasn't thrilled with it.

ganache = chocolate + heavy cream

I finish it with a little clarified butter for extra sheen. Choose the chocolate to your taste.
