Yes, I got the booking. The whole time I am thinking...there has to be a better way.

I am going to do the cupcake thing. Sounds great. Although, do you think that it will taste like it has been frozen? Part of my whole thing is that my cakes are not frozen, always fresh.

About Bridzillas....yeah, I know. I am more concerned about bride mothers than the actual bride. I had one bride pick her cake, and we designed it with roses all over it, which is what she wanted. Apparently, mom did NOT want roses at ALL, and had the florist take any and all roses out of the arrangements for the wedding...so here is this huge cake covered in roses and no roses anywhere else in the entire wedding and the mother is yelling at me becuase I did it wrong. I just smiled and told her that I am sorry for her confusion, but the bride and I design the cake. I would have put anything on it that she wanted and she chose roses. Then I got the h*(& out of there.

I used to be anti-frozen, until I almost by accident had to freeze a cake once. Absolutely no difference.

Just run a test for yourself. Make some cupcakes and put a couple in the freezer for a couple of days. THen take them out to thaw and compare it to your just-baked ones. I was amazed at how moist and good it tasted!

No one can tell...I know it is a pride thing, I do not freeze my other cakes, just my tasting ones, cause I use the extra batter, so there is no waiste...

But walmart and the other food stores freeze ALL their cakes, have you ever wondered why you never smell them cooking in the so called bakery? That is why my dear...they come off the trucks frozen as rocks. I am not knocking them. Honestly Sams club and costco make a mean cake icon_smile.gif

I too have been scared to freeze any cake at all!!! I may have to give it a try though.

When I was growing up the lady who lived next to my great-grandma made cakes (and still does) and all of her cakes were frozen and they were horrible!!!! So...that is what I associate with frozen cakes, although now I think she just made bad cake from the start - frozen or fresh icon_biggrin.gif !

i too don't think there's a difference between a well baked frozen and a well baked non-frozen cake. however, i only sell non frozen cakes and the reason is because i use it as a marketing tool. regardless of the truth of it, most people perceive a "fresh" cake as better than a "frozen" one. so i make sure to tell everyone my cakes are fresh and never frozen. i never say "that makes them better" just state the fact, and then they interpret that as higher quality. its a mind game, and im willing to bake all my cakes a few days before they're due to keep this selling point.

I had fun with one bride who was ooh-ing and ahhh-ing about how good my cake was. "This is MUCH better than a frozen cake!". I said, 'So you want your wedding cake to taste just like that one, then?"
